Oatmeal Chocolate Chip Cookies

1 1/2 cups brown sugar
1/2 cup butter
2 eggs
3/4 tsp. salt
2 cups quick oats
1 1/2 cups flour
1 tsp. baking soda
1 tsp. vanilla
1 1/2 cup chocolate chips
1/2 cup raisins, cooked and blended
Start by covering the raisins with water in a small sauce pan. Bring to a simmer until water has mostly evaporated. Remove from heat and blend into a puree. Set aside.
In a medium mixing bowl cream sugar and butter. Add in the eggs, beating well. Stir in the rest until well combined. Chill dough for 1 hour before baking. Bake at 375F for 10 minutes. Let the cookies rest in the baking sheet for 5 minutes before placing on a wire rack to cool.
Makes about 2 dozen cookies.
